Traditional Pork Curry, Kodagu

About Traditional Pork Curry, Kodagu

Besides its hilly landscape, lush coffee plantations, and cool weather, Coorg is the most famous for its traditional Kodava Pandi (Pahnn-dhi) Curry or simply Pork Curry.

This rich-looking fiery dish has a unique taste because of the Kodava style vinegar, also known as Kachampuli, invented by the Coorgis. Other ingredients that enhance its taste are cinnamon, cloves, cumin, mustard, methi, and curry leaves.

The pork that you use must be of good quality, with all its fat intact. For meat to cook perfectly, it must not be pressure cooked but slow-cooked on a medium flame. The best accompaniments to this curry are kadambattu (rice balls) and akki roti (rice breads).
